Two airtight vessels inside the servant hold wine and water. Tubes carry the liquids to the jug, while separate air passages control whether air can enter the vessels.
The cup’s weight lowers the left hand and first opens the wine vessel’s air passage. As the cup grows heavier, the wine supply closes and the water supply opens. Removing the cup raises the hand and stops the flow.
